Shrimp Orleans

2 Chopped Onions
2 tbls Butter
1 lb Fresh Shrimp
2 tbls Flour
1 cup Sour Cream
Salt & Pepper
Saute onions in butter until light brown.

Simmer shrimp in boiling water to just cover 3 minutes. Drain; save liquid. Shell & devein shrimp.

Dredge with flour, and add to onions. Cook slowly for 5 minutes without browning. Add sour cream; simmer slowly for 20 minutes. Add 1/4 cup shrimp liquid; season to taste with salt and pepper. Heat throughly; serve on buttered toast.

Serves 4.
